When Life Gives You Lemons…

It’s time for Limoncello! We had a beautifully relaxing Sunday today…something we haven’t had the luxury of in a very long time! We slept late, and lounged in bed with the dog followed by a leisurely trip to Starbucks and Whole Foods where we picked up some lovely organic lemons that I’ll be using to make a nice big batch of  Limoncello.  Ahhh, nothing says summer like a ice cold glass of lemon liqueur, right?

Lobster Mac and Cheese

I love lobster, and I love mac and cheese.  Combine the two of them and I’m drooling.  Over the past year I’ve seen this lovely concoction popping up in upscale restaurants all over Boston (and I’m sure other cities as well!) so when Mike’s dad gave us some shucked lobster he had frozen It’s all I could think of.  And you know me… I went with one of Barefoot Contessa’s fool proof recipes. Her mantra of simple and high quality ingredients was key here. You really cant sub for imported Gruyere or the home made fresh bread crumbs. They made all the difference.

Ina love’s her butter. And her cheese.  This recipe had a whole lot of both, but boy was it delicious.  The thing about something like Lobster Mac and Cheese is I know I’m not making it every weekend…so why not just make it right the first time around?

We had more lobster than the recipe called for, and since our meat was previously frozen I decided to just toss it all in there. The result was heavenly, we had delicious chunks of lobster in every bite. Mmm.  Cavatappi Pasta, Gruyere, Extra Sharp Cheddar, Milk and Nutmeg were the key ingredients in this dish. The nutmeg really added a certain something special, however  I did cut back on the amount that the recipe called for.  I happen to love nutmeg but half a teaspoon is a whole lot. This dish got rave revews by mike, and a few of our friends as well so if you happen to have left over lobster (or just want to make some gourmet mac) this is definitely the way to go!

Ingredients

  • Kosher salt
  • Vegetable oil
  • 1 pound cavatappi or elbow macaroni
  • 1 quart milk (whole)
  • 8 tablespoons (1 stick) unsalted butter, divided
  • 1/2 cup all-purpose flour
  • 12 ounces Gruyere cheese, grated (4 cups)
  • 8 ounces extra-sharp Cheddar, grated (2 cups)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon nutmeg
  • 1 1/2 pounds cooked lobster meat
  • 1 1/2 cups fresh white bread crumbs (5 slices, crusts removed)

Directions

Preheat the oven to 375 degrees F.

Drizzle oil into a large pot of boiling salted water. Add the pasta and cook according to the directions on the package, 6 to 8 minutes. Drain well.

Meanwhile, heat the milk in a small saucepan, but don’t boil it. In a large pot, melt 6 tablespoons of butter and add the flour. Cook over low heat for 2 minutes, stirring with a whisk. Still whisking, add the hot milk and cook for a minute or two more, until thickened and smooth. Off the heat, add the Gruyere, Cheddar, 1 tablespoon salt, the pepper, and nutmeg. Add the cooked macaroni and lobster and stir well. Place the mixture in 6 to 8 individual gratin dishes.

Melt the remaining 2 tablespoons of butter, combine them with the fresh bread crumbs, and sprinkle on the top. Bake for 30 to 35 minutes, or until the sauce is bubbly and the macaroni is browned on the top.

Quick Hutch Makeover

You all know I love our dining room hutch. It’s really the focal point of our living and dining area.  The hutch was a hand me down that was repainted a creamy white, however there were a few areas that were just a little lacking. The inside of the cupboards were still unfinished pine, and it was looking a little bland. A while back I picked up some pretty damask wrapping paper at The Paper Source during a sale, and it suddenly struck me  that the paper would be perfect as a liner for the inside of our hutch.

Here’s a shot of what the hutch looked like prior to our little makeover.  The inside was just a little bit blah.

All this project took was the wrapping paper, a jar of Mod Podge, and a little bit of patience!

I measured the back of the Cabinet for each shelf and cut my wrapping paper down to size. I then used a foam craft brush to apply a thin even layer of Mod Podge  to the back of the cabinet. Finally, I placed my pre cut pieces of paper on the back of each shelf and smoothed them down, leaving me with a nice custom wallpaper-esque finish! (Since I know the inside of this cabinet is not really a high traffic area, I opted not to apply another coat of the Mod Podge directly over the paper)   I really love the final product, and best of all it only took about an hour or so to complete.

Simply Summer

One my favorite hints of summer is that first fantastically fresh tomato you pick up at the grocery store.  Summer tomatoes just seem to be so much better then their winter counterparts.  The other night mike and I were in the market for a simple and easy weeknight meal and we happened to have a perfectly ripe heirloom tomato, fresh basil along with a ball of fresh mozzarella. I don’t know about you but that combination just screams home made pizza to me! I picked up a few slices of prosciutto to toss on top, and made a simple Caprese salad on the side.

Simple and fresh ingredients always seem to taste better when you do less! Even Bowser couldn’t resist!

Back to Reality

I’m finally back in the real world, and boy let me tell you it was a hard transition. After leaving my last job and traveling to Ireland coupled with the start of my new job I have been nothing short of exhausted lately!  I forgot to mention before I left that I made a pretty significant purchase prior to my departure….. I bit the bullet and bought my self a new Canon Rebel DSLR Camera! My 25th Birthday is right around the corner after all, and every girl deserves an early birthday present or two right?   The best part is that I was able to play around with it while I was on Holiday!

Just a few of my favorites from the trip. Still can’t believe what a difference the Camera makes!

It’s high time I reconsult my to do list, I have quite a stock pile of projects around here that are being completely ignored! I swear – this weekend it’s back on the wagon!
